This is the perfect dish if you are looking for something light but full of flavor. The fresh salmon and citrus of the yuzu pairs wonderfully with the kick of wasabi.
Ingredients
4 ounces fresh salmon
½ an avocado
½ cup edamame
Sushi rice (we use THESE microwavable packs)
For the Marinade:
Tamari Soy Sauce (Order HERE)
Sesame Oil (we prefer toasted, order HERE)
Yuzu juice (Order HERE)
Kewpie Mayo (Order HERE)
Wasabi Paste (Order HERE)
Ginger paste
Garnishes (Optional):
Fresh Chive
Nori flakes (Order HERE)
Sesame Seeds
Preparation
Step 1: Cut your salmon into small bite-sized cubes. We prefer small cubes for less chewing. Place cubed salmon into a mixing bowl
Step 2: Add marinade ingredients: soy sauce, sesame oil, yuzu juice, wasabi paste, and ginger paste. Mix together and let sit for 5 minutes
Step 3: Cut up avocado into cubes. Prepare your edamame. If using frozen, place in a bowl with a touch of water and salt and microwave for 15-20 seconds, or until dethawed. Place avocado an edamame in bowl with salmon and gently mix
Step 4: Prepare your sushi rice and place in serving bowl. Top your rice with the marinated fish. Add optional garnishes. Enjoy!
